BBQ Season is upon us - Perfect Burger Bun recipe

Recipe: Soft Brioche BBQ Buns

With the merest hint of sunshine, many of us rush to get the BBQ out. So with BBQ weather officially upon us (even if we do have to dodge the odd downpour), it’s time to start brushing up your BBQ recipes. If you’ve never made your own burger buns, this recipe is easy and a real crowd-pleaser too!

Brioche buns are the ideal companion for BBQ food. Most often, unless you’re an experienced baker, it can be much more appealing to buy your brioche burger buns. But this pared-down, simple recipe will give you bouncy, soft burger buns that are deliciously fresh and easy to make.

Ingredients:

  • 500g plain flour (plus a little extra for dusting)
  • 200ml whole milk (plus extra for brushing)
  • 50g unsalted butter
  • 1 egg, beaten
  • 7g sachet of fast-action yeast
  • 15g (1tbsp) caster sugar
  • 100ml water
  • Sesame seeds (optional)

Method:

Gently heat the milk, butter and 100ml water in a pan until the butter is melted. Take it off the heat allow it cool until it is tepid.

In your stand mixer, combine the flour, sugar, yeast and a teaspoon of salt. A little bit at a time, add the milk mixture – it’s best to use your Flexsivisp attachment for this part of the recipe. Add the egg and continue to mix until you have a smooth dough.

Swap the attachment over to the dough hook and knead your dough until it is shiny and elastic. This should take a few minutes and you can test a piece by stretching it. If it breaks immediately, you have more work to do. If it stretches as you pull it, getting thinner and thinner, you’re ready for the next stage.

Now, divide your stretchy dough into 12 evenly sized pieces and roll tightly into balls. Add these to baking trays covered with parchment and make sure to leave a generous space between each dough ball.

Leave the trays in a warm place to prove. After a round 30-45 minutes you should see that they have almost doubled in size. Gently press the rolls down with your palm before brushing their tops with milk. This is when you can add sesame seeds if you want to.

Add the rolls to the oven, pre-heated to 200°c /180°c fan oven / gas mark 6. Bake for 10-12 minutes – the rolls are cooked to perfection when they have risen and are golden brown in colour.

Serve with your favourite BBQ foods or keep in an airtight container for up to 2 days before consuming.
